๐Ÿ“ Creamy, tangy strawberry-cranberry jello mold โ€“ retro, refreshing side dish or dessert for holidays and potlucks!
๐Ÿฅ› Luxurious sour cream swirl elevates classic gelatin โ€“ sets beautifully, slices perfectly, effortless crowd-pleaser!

  • Total Time: 8 hours 10 minutes
  • Yield: 10 servings

Ingredients

– 1 6-ounce package strawberry gelatin

– 2 cups boiling water

– 1 cup ice cold water

– 1 15-ounce can jellied cranberry sauce

– 1 cup sour cream

– Whipped cream for serving, optional

Instructions

1-First step: dissolve the gelatin Start by grabbing a large bowl. Pour in the 6-ounce package of strawberry gelatin, then add 2 cups of boiling water. Whisk until the gelatin is fully dissolved. Do not rush this part, because any undissolved granules can leave tiny specks in the finished mold. Using boiling water is important here because it helps the gelatin dissolve completely.

2-Second step: cool the mixture Whisk in 1 cup of ice cold water. This helps bring down the temperature faster and gets the mixture ready for the next layer. After that, place the bowl in the refrigerator for about 15 minutes so it can cool a bit more. You want it cooled, but not set. If it gets too firm, the cranberry mixture will not blend in smoothly.

3-Third step: mix the cranberry and sour cream In a medium bowl, whisk together the 15-ounce can of jellied cranberry sauce and 1 cup sour cream until the mixture looks smooth and creamy. If you are using whole-berry cranberry sauce, you may still see tiny fruit pieces, and that is perfectly fine. The flavor stays sweet, tangy, and cozy either way.

4-Fourth step: combine carefully Pour the cranberry and sour cream mixture into the cooled gelatin. Stir until everything is evenly combined. Do this gently so you keep the texture silky and do not splash the mixture around. At this stage, the salad should look rosy and creamy, with a smooth, even color throughout.

5-Fifth step: prepare the mold Lightly coat a nonstick gelatin mold with cooking spray. A bundt pan works too if you do not have a special gelatin mold. A 9×13-inch pan is another good option if you would rather cut the dessert into squares instead of unmolding it in one piece. Make sure the coating is even, especially around the edges and center details, so the mold releases cleanly later.

6-Sixth step: chill until firm Transfer the mixture into the prepared mold. Refrigerate for at least 6 hours, but overnight is even better. The longer chill time gives the mold a firmer, cleaner shape and makes it easier to unmold without breaking. This is the perfect make-ahead dessert for holidays or parties because you can do the prep the day before.

7-Final step: unmold and serve When the salad is fully set, run your fingers gently around the edges to loosen it. Invert the mold onto a serving plate and lift it away carefully. If it needs a little help, give the pan a gentle shake rather than forcing it. Slice and serve the Strawberry Jello Mold with whipped cream if you want a sweet finishing touch.
