Instructions

1-First Step: Prep the oven and baking dish Start by preheating your oven to 350 degrees Fahrenheit. Lightly grease a 9ร—13-inch casserole pan so nothing sticks during baking. This size matters because it helps the rice cook evenly and gives the chicken enough space on top. While the oven heats, rinse the basmati rice until the water runs clearer. This extra step helps the grains stay fluffy instead of clumping together. Dice the onion, mince the garlic, grate the carrot, and juice the lime so everything is ready to go.

2-Second Step: Sautรฉ the onion and spices Heat the 1 tablespoon olive oil or coconut oil in a skillet over medium-high heat. Add the diced onion and sautรฉ for 3 to 4 minutes until it softens and starts to look translucent. This gives the casserole a flavorful base right from the beginning.
